Pancakes, Waffles or Muffins
Cultivating a child-like spirit can be done in many ways. One of my favorite ways to take on this mindset is in the kitchen. I love to take a tried and true recipe and think how I can make it mine. Often times this just looks like adding spices that benefit my dosha(mind/body type) or it can mean changing out bleached sugar for coconut sugar. There are times when my changes fail miserably, but it is because of those failures that I’ve learned what works and what doesn’t. The process is always evolving and transforming in the most toothsome(I do love this word) manner. When I find that something really works I can’t wait to share it with those I love including YOU!
This pancake recipe I adapted from Grace and Good Eats is SOLID. The only thing about pancakes is I often don’t have much energy after I eat them, or I do for a minute and then I want to crawl back into bed. The adaptations I made this morning will have you energized and ready to go every day of the week. I hope you enjoy! Who doesn’t want their food to be enjoyable?!

2 Tbs. Chia Seeds
1/4 cup Old Fashioned Oats
3 1/2 tsps. Baking Powder
1/2 tsp Sea Salt
1/4 tsp Cinnamon
1/4 cup Coconut Sugar
1 1/4 cups Water
3 Tbs. Butter, Ghee or Coconut Oil melted
Grass-fed Collagen Powder
Melt the butter in your pancake skillet. Whisk together the chia seeds, oats, water, and egg in a bowl. In another bowl whisk together the dry ingredients. Add your combined wet ingredients to the dry ingredients. While stirring, add the melted coconut oil. This mixture will become nice and thick. If you are using nuts, you can fold them in here. Once your skillet is ready on medium to medium high heat, scoop the batter onto the skillet. Top each pancake with your add-ins of choice if using. Makes 10-12 pancakes or muffins. Makes 5-6 waffles.
