Chocolate Gingerbread Spelt Cookies
Every year at Christmastime I get the itch to bake these chocolate gingerbread spelt cookies. They are my favorite Christmas flavor combination by far! These cookies are chewy, full of chocolate and loaded with spices. I absolutely love the combination of chocolate with gingerbread. I'll be sharing a Chocolate Gingerbread recipe soon inspired by these spelt flour cookies. I chose spelt flour because it is easier to digest and it is very light. I love baking with spelt flour and have been pleasantly surprised with the cookies, muffins and breads I've made using this ancient grain.
To make these Chocolate Gingerbread Spelt Cookies, mix the first four ingredients(wet) in your mixer or by hand with a whisk. In a separate bowl, mix the rest of the ingredients(dry) with a whisk. Slowly add the dry ingredients to the wet. I like to use the paddle attachment with my stand mixer. You can use a spatula if mixing by hand. Add in your chocolate chips. Using a small cookie scoop, place cookies on a non-stick cookie sheet about an inch and a half apart. Chill for 10 minutes in the freezer. I like to place the cookies on a cookie sheet, pop them in the freezer and set the oven to preheat at 325 degrees fahrenheit. Once the oven is ready, I pop the cookies into the oven for 12 minutes. Cool for at least 5 minutes before devouring.
